Ingredients
(Makes 1 loaf | Total time: 50 minutes)
• 2 cups (250g) all-purpose flour, spooned and leveled
• 1 tbsp baking powder (check expiration date—fresh = better rise)
• ½ tsp fine sea salt
• 1½ cups (360ml) cold milk (whole or 2%; must be cold)
• 2 tbsp honey or sugar (optional; adds subtle sweetness and golden color)
• 2 tbsp melted butter or neutral oil (plus extra for greasing)
(Equipment: 8.5x4.5-inch loaf pan, parchment paper optional)
Step-by-Step Instructions
1. Prep with purpose
Preheat oven to 375°F (190°C). Generously grease loaf pan with butter or oil (this delicate bread clings easily). Optional: Line bottom with parchment strip for effortless release.
2. Mix dry ingredients
In a large bowl, whisk flour, baking powder, and salt until completely uniform (no pockets of baking powder).
3. Combine wet ingredients
In a separate bowl, whisk cold milk, honey (if using), and melted butter until smooth. Critical: Milk must stay cold—warm milk activates baking powder too early.
4. Unite gently
Pour wet ingredients into dry. Stir with spatula just until no dry streaks remain (10–15 strokes max). Batter will be thick but pourable. Do not overmix. Lumps are welcome.
